Seven-Eleven Japan Co. has said (that) ～ で「セブン-イレブン・ジャパンは～と発表した」です。

何と発表したかというと、
it will start programs to support ～ で「同社が、～をサポートするための計画をスタートする（と）」です。
it は「セブン-イレブン・ジャパン」を指しています。
programs はここでは「計画」という意味になります。

何をサポートするかというと、
both the private and work-life of foreign workers at its convenience stores で「プライベートと仕事の生活の両方を、同社のコンビニで働く外国人ワーカーたちの」です。
the private and work-life で「プライベート生活と、仕事の生活」です。
「公私両面で」といった意味合いですね。
foreign workers at its convenience stores で「同社のコンビニの外国人ワーカー達」です。

as part of efforts to ～ で「～しようとする取り組みの一環として」です。
as part of efforts はとてもよくみる言い回しですね。
efforts は「取り組み、対応、対処」といった意味合いです。

どんな取り組みかというと、
(efforts to) retain them で「彼らを留めておくための取り組み」 となります。
retain「～を保持する」とは、
ここでは them「その外国人ワーカーさん達」に「ずっといてもらうために」といった意味です。
retain リテインの名詞形は retention リテンション「保持、記憶力」です。

amid a labor shortage で「労働力不足の中」です。
amid ～ は「～のなか、～の渦中で」という意味の前置詞です。

due to Japan’s graying population. で「日本の高齢化していく人口のせいで」です。
graying population「高齢化する人口」もよく聞く言い回しですね。
gray は「灰色」ですが「白髪」という意味もあります。
動詞でも使えて「（社会などが）高齢化する」という意味になります。
例：graying society「高齢化社会」
population は「人口」ですが、集団的に「全住民、国民全員」という意味にもなります。
