And when we gathered together everything we knew about them at age 50,「そして50代の彼らについて分かったことをすべてまとめ上げた時」です。
gather together ～ で「～をまとめ上げる、集計する」です。
gather は「～を集める、寄せ集める、集合させる」です。
例：gather information about the accident 「その事故に関する情報を集める」
everything (that) we knew about them at age 50, で「私たちが知ったすべてのこと、50歳の時の彼らについて」です。

it wasn’t their middle age cholesterol levels that ～ で「それは、彼らの中年期のコレステロール値ではなかった、～なのは」です。
it is ～ that … の強調構文です。
ここでは their middle age cholesterol levels を強調しています。
(that) predicted how they were going to grow old. で「～を予測したのは、彼らがどのように年を取るかを」です。
predict は「予測する、予言する、予見する」という意味の動詞です。
何を予見したかというと、
how they were going to grow old. 名詞節で「彼らがどんな風に年をとることになるか」です。
grow old で「年を取る」となります。
be going to ～ で「～することになる」という意味の言い回しです。

では、予見したのは、何だったのかというと、
It was how satisfied they were in their relationships. で「それは、どれくらい満足しているかだった、彼らが自分たちの人間関係に」です。
how satisfied ～ で「どれほど満足しているか」という意味になります。
【程度】を表す how「どれくらい～か」疑問詞に導かれた名詞節です。
be satisfied in ～ で「～に満足している」という言い回しになります。

それではまず文節に分けて日本語に訳し内容を理解して下さい。

50歳の時の彼らについて分かった（すべてのことを）
