Once we had followed our men all the way into their 80s, we wanted to look back at them at midlife and to see if we could predict who was going to grow into a happy, healthy octogenarian and who wasn’t.
で「ひとたび、調査対象者たちを80歳までずっと調査してきた時、我々は中年時の彼らを振り返ってみて、確かめてみたくなりました。どういうタイプの人が幸せで健康な80代を過ごすことになり、そうではない人はどんな人なのか、予測することはできるだろうかと。」という意味になります。

Once ～ は「ひとたび～してみると、一度～したら」という意味の接続詞です。

Once we had followed our men all the way into their 80s, で「被験者たちを80歳台までずーっと追跡調査してきてみると、～」です。
our men は直訳だと「私たちの男性たち」ですが、ここでは「被験者たち、調査対象の男性たち」を指しています。
our men は他にも軍隊で「兵士たち」という意味でもよく使われる表現ですね。
all the way to ～, all the way into ～ で「ずっと～まで、～まではるばると」と言う意味の言い回しです。

we wanted to look back at them at midlife で「我々は～してみたいと思った、中年時代の彼らを振り返って見（たいと）」です。
look back at ～ で「～を振り返る」
them at midlife で「中年時の彼らを」です。

and to see if ～ で「そして、～かどうか確かめ（たいと）」です。
see if ～ で「～かどうか確かめる」です。
例：see if there are any clues「何か手掛かりがないかどうか確かめる」

何を確かめるのかというと、
(if) we could predict who was going to で「我々は～を予測できる（かどうか）、だれが～することになるかを」です。
predict は「～を予測する」という意味の動詞です。
名詞形は prediction で「予測、予言、予想」です。
pre-（先に）＋ dict「述べる」

who was going to grow into a happy, healthy octogenarian で「誰が、幸せで、健康な80歳の人に成長することになるか」です。
grow into ～ で「成長して～になる」という意味の言い回しです。
例：He grew into a talented dancer.「彼は成長して才能のあるダンサーになった。」
octogenarian オクトジ[ネ]リアンで「80歳（代の人）」です。
他にモ、70歳（Septuagenarian）、80歳（Octogenarian）、90歳（Nonagenarian）、100歳（Centenarian）というそうです。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
