Today, while stocking the shelves, a customer demanded I ring up his stuff. I’m not a cashier and therefore don’t have a login code to do so, so I told him as such. He then pulled out a knife and threatened to stab me if I didn’t ring him up. I’m currently writing this from the ER. FML

Today, while stocking the shelves, a customer demanded I ring up his stuff. I’m not a cashier and therefore don’t have a login code to do so, so I told him as such. He then pulled out a knife and threatened to stab me if I didn’t ring him up. I’m currently writing this from the ER. FML
で「今日、店の棚を補充していたら、ある一人の客が自分の商品のレジ打ちをしてくれと要求してきた。私はレジ係ではないのでレジ打ちのためのログインコードを持っていない。だから彼にそのように言った。そうしたら彼はナイフを取り出して、もし私がレジ打ちしないなら私を刺すと脅してきた。私は今、救急医療室からこの投稿を書いている。F*ck my life!」という意味になります。

while stocking the shelves, で「私が店の棚の補充をしている時に」です。
while I was stocking ～ の省略形です。
stock the shelves で「店の棚の補充をする」という意味の言い回し。
棚を補充する人を stocker と言ったりします。
a customer demanded (that) I ring up his stuff. で「あるお客が～を要求した、私が彼の物をレジ打ちすることを」です。
demand that ～ で「～と言うことを要求する」です。
何を要求してきたかというと、
(that) I ring up his stuff. で「私が彼のものをレジ打ちする（ことを）」です。
ring up ～ で「～をレジ打ちする、～をレジで会計する」という意味の句動詞。
昔のレジはレジ打ちすると「チーン」とベルが鳴る ring 音がしたからですね。
his stuff で「彼の物」です。ここでは彼の買い物、買う商品です。

I’m not a cashier で「私はレジ係ではない」です。
cashier は「レジ係」という意味です。
and therefore「それ故に」
don’t have a login code to do so,「私はログインコードを持っていない、それをするための（コードを）」

so I told him as such. で「だから、私は彼に言った、そのように」
as such は「そのように」です。私はログインコードを持っていないからレジ打ちできない、と説明したわけですね。

He then pulled out a knife で「彼は、そうしたら、ナイフを取り出した」です。
and threatened to stab me で「そして私を刺すと脅した」です。
threaten to do ～ で「～するぞと脅す」です。
if I didn’t ring him up. で「私が彼の物をレジ打ちしなかったら」です。

I’m currently writing this from the ER. で「私は現在これを書いている、ERから」です。
this とはこのFMLの投稿のことですね。
ER は Emergency Room の略で「救急医療室」のことです。
