で「今日、私は武闘派ヴィーガンの同僚に、父と狩猟に行った懐かしい思い出のことを言ってしまうという過ちを犯してしまった。そのことは彼女はトーフ爆弾のごとく怒らせてしまった。もし彼女が、中傷したり陰口を言ったりなどで、私を悪魔のように扱うのを止めなかったら、私は彼女のことで人事部に行かなければならないかもしれない。 F*ck my life!」という意味になります。

I made the mistake of ～ing で「私は～するという間違いを犯した」という意味の言い回しです。
make a mistake で「間違いを犯す」です。
どんな過ちかというと、
telling my militant vegan coworker (that) ～ で「武闘派ヴィーガンの同僚に～ということを伝える」という過ちです。
tell ～ … で「～に…を伝える」です。
my militant vegan coworker で「武闘派のヴィーガンの同僚」です。
militant [ミ]リタントゥは「過激な、戦闘的な、闘志あふれる」という意味の形容詞。
例：militant environmentalist「過激な環境保護主義者」、militant guerilla「武闘派ゲリラ」
何と言ってしまったかというと、
(that) I have fond memories of hunting with my dad, で「私には父と狩猟に行った懐かしい思い出がある（こと）」です。
hunting は動物の肉を狩ることなので、ヴィーガンにとっては悪の行為なんですね。
fond memories で「懐かしい思い出」です。fond は「愛情のこもった、優しい気持ちの」です。

which set her off で「そのことが彼女を激高させた」です。
which は直前の文全体「そのこと」を主語にとった関係代名詞です。
set ～ off で「怒らせる、爆発などを引き起こす」という意味の句動詞です。
例：set off a boom「ブームを起こす」、set off a riot「暴動を引き起こす」
set は過去・過去分詞ともに同形を取る動詞ですので、ここでは過去形になっていることに注意しましょう。
like a tofu-powered grenade. で「豆腐をエネルギー源とする手りゅう弾のように」です。
～-powered のかたちで「～をエネルギー源とする」という意味の形容詞が作れます。
例：atomic-powered cruiser「原子力巡洋艦」

If she doesn’t stop treating me like the devil, で「もし彼女が～を止めないなら、私を悪魔のように扱うのを」
making snide comments, and other shit, で「意地悪なことを言ったり、その他いろいろ」です。
I may have to go to HR about her. で「私は彼女のことについて人事部に行かないといけないかもしれない」です。
HR は human resources department で「人事部」のことです。
