they have enjoyed a break from ～ で「彼らは楽しんできた、～からの休息を」です。
they は学生たちのことを言っています。
a break from ～ で「～からの休息」という意味のコロケーション。

何からの休息（break）かというと、
(from) both repayments and interest で「返済と利子の両方」です。
repayment は「返済」という意味の名詞。

interest はここでは名詞で「利子、利息」という意味になります。
