で「そのスタートアップ企業（OpenAI）は、当初は人類に益するためにAIを作り上げる目的の非営利企業として設立された。しかしその後、営利目的の子会社を設立してマイクロソフトからの巨額の投資を受け入れた。とその訴訟は主張している。」という意味になります。

The lawsuit argues that ～ で「その訴訟は～だと主張する」です。
その訴訟は、記事で前述されているイーロンマスクがOpenAI社に起こした訴訟のことです。
なんと主張しているのかというと、
(that) the startup was originally set up as a non-profit で「そのスタートアップ企業（OpenAI）は、当初は非営利企業として設立された」です。
the startup「そのスタートアップ企業」は OpenAIの言い換え表現（パラフレーズ）です。
was set up as ～ で「～として設立された」
a non-profit で「非営利企業」a non-profit organization（NPO）とも言います。
with the aim of ～ で「～という目的で」という意味のコロケーション。
(of) building AI for the “benefit of humanity” で「AIを作り上げる（という目的）、人類の利益のために」です。
build は「建物を建てる」という意味以外にも「～を組み立てる、作り上げる」という意味でも使えます。

, but ～「しかし～」
has since established a profit-making subsidiary で「その後、営利目的の子会社を設立した」
establish は set up の同義語（synonym）で「～を設立する、創設する」です。
subsidiary サブ[スィ]ディアリで「子会社」という意味の名詞です。
