American stuntmen are smart – they think about safety. When they do a jump in a car, they calculate everything: the speed, the distance… But in Hong Kong, we don’t know how to count. Everything we do is a guess. If you’ve got the guts, you do it. All of my stuntmen have gotten hurt.

で「アメリカのスタントマンは頭がいい。安全のことを考えている。車でのジャンプシーンを撮るとき、スピードや距離などあらゆることを計算する。でも香港映画だと、私たちは数の数え方がわからない。見当をつけるだけだ。度胸があるのならやってみる。私のスタントマンはみんな怪我をしてきたよ。」という意味になります。

American stuntmen are smart で「アメリカ人のスタントマンたちは頭がいい」です。
stunt で「（離れ技を）行う」という意味の動詞。名詞では「離れ業、妙技、大胆な行為」
例：crazy stunt「とても危険な離れ業」
– they think about safety. で「彼らは安全について考える」です。

When they do a jump in a car, で「彼らが車に乗ってのジャンプを行うとき」です。
a jump in a car は「車に乗ってのジャンプ」です。
in a car は「車に乗って、乗車して」という意味になります。
例：He started to commute in his own car.「彼はマイカー通勤を始めた。」
, they calculate everything: the speed, the distance… で「彼らはすべてを計算する、スピードや距離などを」
calculate [キャ]ゥキュレイトゥで「～を計算する、計算して予測する」です。
名詞形は calculation キャゥキュ[レ]イション「計算、演算、勘定、予測」

But in Hong Kong,「しかし香港では」
アメリカのハリウッド映画に対して、香港映画では、ということですね。
we don’t know how to count. で「私たちは数の数え方を知らない」です。
how to count で「数の数え方」です。

Everything we do is a guess. で「私たちが行うすべては、見当をつけることだけだ」です。
Everything (that) we do が主語になっています。
a guess は「あてずっぽう、適当に言ってみる、推量すること」です。
例：make a guess「あてずっぽうを言う」

If you’ve got the guts, で「もしガッツがあるなら」
you’ve got ～ で「（あなたは）～を持っている、～がある」です。
have got ～ の略です。
例：You’ve Got A Friend「君には友達がいる（Carole Kingの曲）」
guts は「勇気」です。gut「はらわた」という意味から「肝、勇気」という意味になっています。
例：have the guts to say no「ノーという勇気がある」
you do it. で「あなたはそれをする」

All of my stuntmen have gotten hurt. で「私のスタントマンはみんな怪我をしてきた」
get hurt で「けがをする」です。
hurt は過去形・過去分詞形とも同じ形（hurt/hurt/hurt）になる不規則動詞です。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
