で「シンプルなことだよ。役が来る。役を演じる。きちんと演じる。自分の仕事をして、家に帰る。そして映画の素晴らしいところは、ひとたび完成すれば、それは観客のものになるということだ。作品を作り上げた後は、人々が目にするものこそがその作品なんだ。私はそういう考えでやっている。」という意味になります。
It’s simple:「それはシンプルだ」
You get a part.「配役を得る。（役をもらう）」です。
デンゼル・ワシントンは俳優なので、俳優の仕事について話しています。
ここでの you は総称用法の you で、特定の人（あなた）ではなく、話し手を含む「人々一般」「誰でも」「普通は～するものだ」という意味です。
part で「（劇の）役、配役、役割」という意味になります。
例：big part「大役」、minor part「端役」
You play a part.「役を演じる。」
You play it well.「その役を上手に演じる。」
You do your work and you go home.「仕事をして、家に帰る。」
And ～「そして～」
what is wonderful about movies is that ～ で「映画について素晴らしいことは～ということだ」です。
この What ～ is that … は、会話文でよく使われる言い回しで「～なことは、…だということだ。」です。
what is wonderful about movies で「映画について素晴らしいこと、映画で素晴らしい点」です。
どんなことかというと、
(that) once they’re done, で「一度それらがが終わってしまえば、」
they は直近の movies を指しています。
be done で「終わる、完了する」
they belong to the people. で「それらは人々のものだ（ということだ）」です。
belong to ～ で「～に属する、～のものである」
the people は「大衆、民衆、国民、人々」です。
Once you make it,「一度それを作ってしまえば」
it’s what they see.「それは、彼らが目にするものなのだ。」です。
つまり、人々の目にするものこそがその作品である、ということですね。
That’s where my head is at.「今の自分の考えはそこにある。」です。
where someone’s head is at で「（人）が何を考えているか（ということ）」という意味の言い回しです。
人の頭がどこに向いて（at）いるか、ということですね。
それではまず文節に分けて日本語に訳し内容を理解して下さい。
