I was like, “Really?” and he was like, “Absolutely.”

And this is where my story starts. When I was a young researcher, doctoral student, my first year, I had a research professor who said to us, “Here’s the thing, if you cannot measure it, it does not exist.” And I thought he was just sweet-talking me. I was like, “Really?” and he was like, “Absolutely.”
で「そして、ここから私の物語が始まります。私がまだ若い研究者で、博士課程の1年目だったころ、ある研究指導の教授が私たちにこう言いました。『いいですか。測定できないものは、存在しないのです。』 私は、先生が私の喜びそうなことを言って、うまくその気にさせようとしているだけだと思いました。そこで私は、『本当ですか？』という感じで聞き返しました。すると先生は、『もちろんです』と答えたのです。」という意味になります。

And this is where my story starts.「そして、ここが私この話が始まるところです。」
When I was a young researcher, doctoral student, my first year,「私が若き研究者で、博士課程の学生、一年目だった時」です。
doctoral で「博士課程の」という意味の形容詞。
名詞形 doctor で「博士」ですね。
対して「修士」は、master、「学士号」は bachelor となります。
I had a research professor「ある研究指導の教授がいました。」です。
who said to us,「（その教授は）～と私たちに言いました」
“Here’s the thing,「ここが重要です」
if you cannot measure it, it does not exist.”「もしそれを測定できないのなら、それは存在しないのです。」です。
And I thought ～「そして私は～だと思いました。」
(that) he was just sweet-talking me.「彼はただ私の喜びそうなことを言っているだけだ（と）」です。
sweet-talk ～ で「～を甘言でだます、おだてる、甘い言葉でその気にさせる」という意味の動詞です。
I was like, “Really?”「私の反応は『本当ですか？』 という感じでした。」
and he was like, “Absolutely.”「そして彼の返答は『もちろん本当です』でした。」です。
それではまず文節に分けて日本語に訳し内容を理解して下さい。

そしてここから私の話が始まります

私が若き研究者だった頃
doctoral student, my first year,
博士課程の生徒で、一年目
I had a research professor
研究指導の教授がいました
