It’s officially summer, and with the humid heatwave we all need something nice and cold to keep our minds off the soaring temperatures.
で「本格的な夏です。むしむしした熱波の中で、急上昇する気温から気持ちを避けるために、私たちはみんな何か丁度よく冷たいものが必要です。」という意味になります。
It’s officially summer で「本格的な夏です」となります。
officially は「公式に、正式に」という意味ですが、「本格的に」という意味でも使われます。
例：I officially love her now.「彼女に本気になってしまった。」
with the humid heatwave で「蒸し暑さで、蒸し暑さのなか」
humid は「湿った、じめじめした、むしむしした」という意味の形容詞です。
例：humid air「湿度の高い空気」
humidifier ヒューミディファイァーで「加湿器」となります。
we all need something nice and cold で「みんなちょうどよく冷たいものが必要だ」
nice and ～ で「ちょうどよく～」という意味になります。
例：nice and warm「いい具合に温かい、」、keep a pencil nice and sharp「鉛筆をいい具合に尖らせておく」
to keep our minds off the soaring temperatures で「私たちの心を急上昇する気温から離しておくために」
keep ～ off … で「～を…から離しておく、…から～を避ける」という意味です。
急上昇する気温で心がだらけてしまわないように、という意味合いですね。
soar ソアは「急上昇する」という意味の動詞です。
temperature は「気温、温度」です。
発音は、テンパチュァーと、ラは発音しません。
全体的な「気温」という意味の場合は、-s をつけて複数形にする場合があります。
それではまず文節に分けて日本語に訳し内容を理解して下さい。

じめじめした暑さで

私たちはみんないい感じに冷えたものが必要です
