Though ～ で「～だが、～ではあるものの、～とはいえ」で、逆説の接続詞です。

the higher temperature in the late fall までが主語で「秋下旬のいつもより暖かかった気温」です。
the higher temperature で「（例年よりも）高い気温」です。
in the late fall で「秋下旬の」となります。
late ～ で「～下旬、～後期」という意味になります。
例：late 80s「80年代後期」、late Monday「月曜遅く」、late morning「昼近く、昼前」
fall はアメリカ英語で「秋」です。イギリスでは autumn [オ]ータムとなります。

delayed the end of ～ で「～の終わりを遅らせた」です。
(the end of) dormancy for cherry blossom trees, で「桜の木の休眠期（の終わり）」です。
dormancy で「休眠」です。
形容詞形は dormant ドーマントゥ「休眠中の、休止状態の」です。
例：dormant account「休眠口座」、dormant volcano「休火山」

similar to ～ で「～に似ている、～に近い」です。
hibernation ハイバネイション「冬眠」です。

enabling ～ は分詞構文になります。
catch up with ～ は「～に追いつく」という意味の句動詞（phrasal verb）です。
