で「そして演壇から離れた時さえ、もし誰かが挨拶をしようと呼び止めた時などは、祖父はよく、すぐに話を切り上げてしまったりもしました。相手の時間を多くとりすぎてしまっていないかという不安からでした。」という意味になります。

And even away from the podium, で「そして演壇から離れてさえも」です。
away from the podium で「演壇から離れて」という意味になります。
podium は「演説するときの台」や「表彰台」という意味があります。
祖父がラビとして説教をするときの演壇のことですね。

when you called him to say hello, で「あなたが彼に挨拶しようと呼び止めた時」です。
この場合の when you ～ は「もし誰かが～したとしたら」と言った意味合いになります。
call ～ で「～を呼び出す、～に来るように言う」という意味から「～に電話する」という意味もありますが、
この場合は、説教が終わって信徒たちに挨拶するために話しかけられているシチュエーションですね。

もしそうしたら、
he would often end the conversation prematurely で「祖父は～することが多かった、話を早々に切り上げてしまう」です。
would often ～ で「よく～したものだ」という意味です。
end the conversation で「会話を終わらせる」です。
prematurely プリマ[チャ]リィで「早々に、早まって」という意味の副詞です。
形容詞形は premature プリマ[チャ]で「早すぎる、時期尚早の」です。
例：premature child「早産児」、premature death「早すぎる死」
pre-（前の）＋ mature「熟した、成熟した」です。

for fear that ～ で「～という恐怖のために」という意味の言い回しです。
例：for fear of being hurt「傷つくことを恐れて」

どんな恐怖からかというと、
(fear that) he was taking up too much of your time. で「彼がその人の時間を取り過ぎている（のではという恐怖）」です。
take up ～ で「（時間を）取る」という意味です。
例：take up someone’s precious time「人の貴重な時間を取る」

それではまず文節に分けて日本語に訳し内容を理解して下さい。

もし誰かが祖父に挨拶するために話しかけたら
