で「そしてまた、ここまでは話す内容についてでしたが、古い歌にもあるように、話す内容も大事ですが、同時に話し方も大事です。」という意味になります。

今回から、話題が変わって、前回までの「HAIL」から、話し方（the way that you say it）についての話題に移ります。
今回の文は、話題の切り替え表現ですね。

Also, now that’s what you say, で「そして、ここまでは話す内容についてお話ししました」という意味合いになります。

now that’s ～ は「ここまでは～」という意味合いです。
この now は「今」ではなく、「さあ、さて（これで）」という意味になります。
what you say は「何を話すか、話すこと、話す内容」という意味です。

it’s like the old song は「古い歌にあるように」です。
これは、次の、
it is what you say, it’s also the way that you say it の部分を指しているようですが、
「古い歌」について調べてみましたが、よくわかりませんでした。

it is what you say, it’s also the way that you say it. で「話す内容、そしてまた話し方」となります。
what you say「話す内容」
the way that you say it「話し方」
です。
ここからは、話し方・声の出し方についてレクチャーが始まっていきます。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
