ophthalmologist「眼科医」 を調べていて見つけたwikipediaの説明文からです。
医療系の用語が多く出ますがよくつかわれる単語ばかりなので一つ一つ見ていきましょう。

Ophthalmology is the branch of medicine that deals with the anatomy, physiology and diseases of the eye.
で「眼科とは、目の解剖学・生理学・病気などを取り扱う医療の分野である。」という意味になります。

Ophthalmology オフソ[モ]ロジーは「眼科、眼科学」という意味の名詞です。l はほぼ発音しません。
ophthalmologist でオフソモロジストゥで「眼科医、眼医者」という意味になります。
簡単に言う場合は eye doctor でもOKです。
語源は ギリシャ語 ophthalmos（目）からきてます。

the branch of medicine で「医療の分野」という意味になります。
branch は「分かれた枝」という意味なので、「分野、部門、分科」という意味でつかわれます。
また会社などの「支店、出張所、支社」という意味でもよく登場しますね。
例：open a new branch office in Tokyo「東京支社を新しくオープンする」
medicine [メ]ディスンは「薬」という意味でおなじみだと思いますが、今回のように薬療法も含めた総合的な「医薬、医療、医術」という意味になります。
例：medicine education「医学教育」、community medicine「地域医療」

deal with ～ は「～を扱う、～に対処する」という意味の句動詞です。
例：deal with a customer「お客に対応する」、deal with a problem「問題に取り組む」

anatomy アナトミーは「解剖、解剖学、生体の構造」という意味になります。生体の構造を研究する分野です。
例：basic anatomy of the brain「脳の基本的な構造」、cardiac anatomy「心臓の解剖、心臓の構造」

physiology フィジ[ア]ロジーは「生理学」です。生体の機能を研究する分野ですね。
例：cardiac physiology「心臓の生理（どう機能しているか）」
