で「コロナウイルスの大流行が続く中、一つの会社が日本でのマスク不足を緩和させるのにユニークなアプローチをとっている。株式会社あつみファッション（富山県に本社を置く縫製会社）は、女性用下着を使ってマスクを生産している。」という意味になります。

As the coronavirus pandemic continues, で「コロナウイルスの大流行が続く中」という意味です。
as ～ で「～する中で」という意味の接続詞になります。
while ～ とも言い換えられます。

one company is taking a unique approach to easing the shortage of masks in Japan. で「ひとつの会社がユニークな手法を取っている、日本でのマスク不足を和らげることに向けて」です。
take a ～ approach to … で「…に対して～なアプローチ法をとる」です。
approach to ～ の後には名詞（noun）が来ます。
approach は「（～へ）接近する、近寄る、迫る」という意味のです。
例：approach to life「人生に対する取り組み方」、approach to managing pain「痛みへの対処法」
easing は ease 動名詞形（gerand）で「和らげること、緩和」です。
例：ease a feeling of anxiety「不安感を軽減する」
the shortage of masks in Japan で「日本でのマスク不足」となります。

Atsumi Fashion Co., a sewing company based in Toyama Prefecture, までが主語で「株式会社あつみファッション（富山県に本社を置く縫製会社）」となります。
sew ソウで「縫う」という意味の動詞です。sewing ソウイングで「縫製、裁縫」です。
例：sew a pair of pajamas「パジャマを一着縫製する」

is producing masks by repurposing women’s underwear. で「が、マスクを製造している、女性用下着で代用して」となります。
repurpose リパーパスで「（既存のものを）～を別の目的で使う」という意味の動詞です。
re-（再び）＋ purpose（目的とする）です。
underwear は「下着」ですね。
同社はブラジャーの裏地（the cloth lining from bras）を使ってマスクを作っているそうです。
