で「しかしながら、オリンピックの開会まで残り2か月という状況の中で、大会組織委員会は、この世界的スポーツイベントをパンデミックの中で主催することは日本の医療システムにさらなる負担をかけるのではないか、という高まる世の中の不安に直面している。」という意味になります。

with ～ …ing は付帯状況の with で分詞構文「～が…する状況の中」という意味になります。

just two months「たったの2か月」が
remaining「残っている」（状況で）ということです。
until the opening of the Olympics, で「オリンピックの開会までに」です。
ちなみにオリンピックの英語での書き方ですが、the Olympics と the がついて -s が付きます。
the Olympic Games と書くこともできます。

the organizers have faced growing public concerns で「大会主催者たちは～に直面している、高まる世間の不安に」です。
the organizers で「その主催者たち」です。
大会組織委員会（organizing committee）のことです。
face a concern で「懸念に直面する、不安にさらされる」です。
この意味では concern は可算名詞となりますので注意しましょう。
growing public concerns で「高まる世間の不安」です。

どんな不安かといいますと、
concerns that ～「～という不安」です。

staging the global sporting event in the middle of the coronavirus pandemic までが主語となります。
「コロナウイルスパンデミックの真っ最中にその世界的なスポーツイベントを開催すること」です。
stage ステイジはここでは動詞で「～を主催する、上演する、開催する」という意味になります。
the global sporting event で「そのような世界的スポーツイベント」でオリンピックのパラフレーズ（言い換え）表現です。
in the middle of ～ で「～のさなかに、～の真っ最中に」です。
amid ～, in the midst of ～ などとも言えます。

開催すること、がどうなのかというと、
could further overstretch Japan’s health care system. で「日本の医療システムにさらに負担をかけるかもしれない（と）」です。
この could は「～しうる、～するかもしれない」という意味になります。
further は副詞で「さらに、その上に、今以上に」
overstretch は直訳すると「伸ばし過ぎる」ですが、ここでは「ストレスをかける、負担をかける」という意味です。
ゴムなどを無理に伸ばし過ぎて、引きちぎれそうになっているイメージですね。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
