As the novel coronavirus pandemic continues to unfold で「新型コロナウイルスパンデミックが広がり続ける中で」となります。
As ～ は「～する中で、～しながら、～するにつれて」などという意味の接続詞です。
the novel coronavirus pandemic で「新型コロナウイルスのパンデミック」です。
novel は「小説」という意味でおなじみですがここでは形容詞で「新手の、新型の、いままでにない」という意味です。
例：novel approach「目新しいやり方」、novel cancer therapy「新型のがん治療」
unfold は「広がる、展開される」という意味の動詞です。
un- ＋ fold「折りたたむ」なので、折り畳まれたものが広げられていくイメージです。
この文脈では、spread とも言い換えられます。
delays in trial hearings and the prospect of packed court schedules later this year までが主語（主部）になります。
「口頭弁論の遅れと、年内の込み合う法廷の見込み」です。
delays in trial hearings で「口頭弁論の遅れ」となります。
この場合の delay ディ[レ]イは「遅れ」という意味の名詞です。
delay in ～ で「～の遅れ、遅延」という意味の言い回しです。
trial hearings で「裁判の口頭弁論」です。
trial で「裁判の、公判の」という意味の形容詞です。

反対は earlier this year で「今年これまでの」となります。
are raising concerns で「心配を生じさせている」です。
raise レイズは「上げる、高める」ですが、このように「（心配・問題、興味などを）高める、引き起こす」という意味でも使われます。
among law practitioners in the nation で「日本の法律実務家の間で」です。
among ～ で「～のなかで、～の間で」です。
law practitioner は「法律実務家、法律家、弁護士」です。
(concerns) about whether ～ で「～かどうかについて（の心配）」です。
(whether) justice will be fairly served で「裁判が公平に行われる（かどうか）」です。
justice は「正義」という意味もありますがここでは「裁判、司法」です。
be served で「提供される、施される」です。
教会の礼拝なども service と言います。
