Today, when my son told me he wanted to work with animals, I thought he meant a vet, turns out his actual career goal was to be the guy who puts the strays to sleep at the animal control centre. He got that job and I’ve never seen him happier. What monster have I raised? FML
で「今日、動物と一緒の仕事がしたいと息子が言った時、私は獣医のことかと思ったが、実際の彼のなりたい仕事は、動物管理センターで迷い犬や迷い猫を安楽死させる人になることだった。彼は今その仕事に就いていて、かつてないほどに幸せそうだ。私はいったいどんな怪物を育ててしまったのだろう？ F*ck my life!」という意味になります。

when my son told me (that) ～ で「私の息子が、私に、～だと言った時」
(that) he wanted to work with animals, で「彼が動物と一緒に働きたい（と）」となります.

I thought (that) he meant a vet, で「私は～だと思った、彼は獣医のことを言っているんだと」です。
mean ～ で「～のことを指して言う」という意味になります。
例：I mean the cat.「その猫のことを言っています」
vet は veterinarian の略で「獣医」です。

turns out ～ で「最後には～だと判明した」という意味の言い回しです。
It turns out (that) ～ の省略形です。

何であると判明したかというと、
(that) his actual career goal was to be the guy who ～ で「彼の実際のキャリアゴールは、～の人になることだった」です。
career goal で「職歴上の目標」という意味ですが「仕事で最後はどうなりたいか、どんな仕事に就きたいか」ということです。
to be the guy who ～ で「～するひとになること」です。
guy は person と同じ意味です。
何をする人かというと、
(the guy who) puts the strays to sleep で「迷い猫や犬を安楽死させる（人）」です。
the strays で「野良犬や野良猫」という意味になります。
stray ストゥ[レ]イで「はぐれた、道に迷った」という意味の形容詞です。
名詞では「迷子、迷い猫・迷い犬」となります。
put ～ to sleep は「～を眠らせる、安楽死させる」という意味のイディオムです。
安楽死は euthanasia ユーサ[ネ]イズィアとも言って、動詞なら euthanize [ユ]ーサナイズ「～を安楽死させる」とも言えます。

He got that job で「彼はその仕事を得た」です。
今はその仕事に就いているということです。
and「そして」
I’ve never seen him happier. で「私は彼がそれ以上幸せそうなのを見たことがない」です。
否定形と比較級を使った最上級の表現方法ですね。
例：I couldn’t be better.「最高に調子がいいです。」

What monster have I raised? で「いったいどんな怪物を私は育ててしまったのか？」です。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
