で「まあ、説明するのが難しいですが、それは間違いなく一人の人間の成果ではありません。つまり、みんな象徴が好きなので、私はある種の象徴みたいに扱われますが、マックについてはチームの努力のたまものなのです。」という意味になります。

So it’s hard to explain, で「まあ、説明することは難しい（ですが）」です。

and it’s certainly not the result of one person. で「それは間違いなく一人の人間の成果ではない」です。
certainly not ～ は否定の強調で「絶対に～ではない、間違いなく～ではない」となります。
absolutely not ～ とも言い換えられますね。
ちなみに、これを逆にして、not certainly ～（not absolutely ～）とすると部分否定となり「必ずしも～ではない」という意味になります。
the result of one person で「一人の人の成果」です。
result は「結果」という意味ですが、ここでは「（望ましい）成果、効果、業績」という意味になります。

I mean,「つまり～」

people like symbols,「人はシンボルが好きだ」です。
symbols とは「象徴」です。

so I’m the symbol of certain things, で「だから、私はある種のシンボルである」です。
つまり、マックを作った偉業の象徴としてジョブズが目立っているが、その後ろには実はチームの人々の甚大な努力があるのだ、ということです。
～ of certain things で「何らかのものの～」です。
ここでの certain は「ある種の、いくらかの、なんらかの」といった意味合いです。
例：on a certain day in September「9月某日に」

but it really is – it was a team effort on the Mac. で「だが、それは本当は、それはチームの努力だった、Macへの」です。
effort on ～ で「～への努力、～への取り組み」という意味のコロケーションです。
例：his effort on cutting the costs「コストカットへの彼の取り組み」

それではまず文節に分けて日本語に訳し内容を理解して下さい。

and it’s certainly not
それは間違いなく～ではない

the result of one person.
一人の人間の成果
