I fly into space で「私は宇宙に飛行する」
to do what I love, で「～をするために、私が愛することを」です。
not to set records. で「記録を作るためではなく」です。
set a record で「記録をつくる、記録を更新する」です。

I’ve dreamt of ～ で「私は～を夢見てきた」です。
dreamt ドゥ[レ]ムトゥは dream の過去形、アメリカでは dreamed が使われます。
dream of ～ing で「～を夢見る」という意味の言い回し。
and ～「そして～」
aspired to become a cosmonaut で「宇宙飛行士になることを熱望してきた」
aspire アス[パ]イアーで「熱望する、目指す、切望する」です。
cosmonaut [カ]ズマノトゥは astronaut [ア]ストゥロノトゥと同じで「宇宙飛行士」
cosmonaut が旧ソ連、astronaut がアメリカのイメージです。
