bariatric バリ[ア]トゥリクで「肥満学の」という意味の形容詞。
surgeon で「外科医、執刀医」です。
(who) has performed 2500+ weight management surgeries で「2500件以上の体重管理手術をしてきた（外科医）」です。
perform surgery で「手術をする」という意味のコロケーション。
2500+ は、 more than 2500 や over 2500 を縮めた表現ですね。
weight management surgeries で「体重管理手術」
高度肥満症治療のための、胃の切除やバイパス手術などが有名ですね。
in the UK & US. で「イギリスとアメリカで」
GLP-1 weight loss medication で「GLP-1系の減量の治療法」です。
GLP-1「グルカゴン様ペプチド-1」、インスリンの分泌をコントロールするホルモンです。
weight loss medication で「減量の治療法」です。
インスリンの分泌を促して血糖値を下げる、脳に働いて満腹感をもたらすなどの効果があります。
最近日本でもニュースでよく話題になる「マンジャロ」などが有名です。

（※上のmedication に合わせるなら、have ではなく has が文法的には正しいです。）
create a drop in ～ で「～の減少を創り出す」です。
(in) bariatric surgery. で「肥満手術（の減少）」です。
My colleagues in the field で「その分野の私の同僚たち」
are disappointed,「～は、がっかりしてる。」
, but I’m thrilled「でも私はワクワクしてる」です。
thrilled で「興奮する、ワクワクする」です。
thrill は「～をゾクッとさせる、ワクワクさせる」なので、恐怖を伴うようなワクワク、「武者震い」などに近い意味合いですね。
as ～「～なので」
I was growing tired of ～「～にうんざりしてきていた」です。
grow はここでは「育つ」ではなく、「～になる」という意味です。
例：grow concerned about ～「～が心配になる」
(of) the same operation. で「同じあの手術（に）」です。
operation も surgery と同じく「手術」という意味がありま。・
それはまず文節に分けて日本語に訳し内容を理解して下さい。
