It is often said that job interviews are perhaps some of the most nerve-wracking and unpleasant experiences we will ever have to go through.
で「就職の面接は、私たちがくぐり抜けねばならない、恐らくもっとも神経をすり減らし不快な思いをする経験のひとつだとよく言われています。」という意味になります。

It is often said that ～ は「～と言うことがよく言われている」という意味の言い回しですね。
It is said that ～ 構文は、頻出表現ですのでしっかり押さえておきましょう。

job interviews は「仕事の面接」です。
interview は「記者会見、インタビュー」という意味もありますが、今回のように「面接、面談」という意味になります。
例：interview a job applicant「仕事応募者を面接する」

nerve-wracking は「神経をすり減らすような、神経を荒廃させるような」という意味の形容詞です。
nerve は「神経」、wrack「破壊、難破させる」です。

unpleasant は「不快な、不愉快な、楽しくない」です。
un-（否定）+ pleasant（心地よい、楽しい、愉快な）

we will ever have to go through は直前の experiences を修飾する関係代名詞節になります。
「私たちが絶対にくぐり抜けなければならない」という意味です。
go through は「～を経験する、～を体験する、～をくぐり抜ける」という意味の句動詞です。
例：go through a difficult divorce「つらい離婚を経験する」

それではまず文節に分けて日本語に訳し内容を理解して下さい。
