で「私たちの一番新しい脳、ホモサピエンス脳である大脳新皮質は、”何を”のレベルに対応しています。大脳新皮質は私たちの理性的・分析的思考、そして言語の分野をすべて担当しています。」という意味になります。

Our newest brain, our Homo sapien brain, our neocortex, までが主語です。
「私たちの一番新しい脳、ホモサピエンス脳である大脳新皮質は」となります。
neocortex で「大脳新皮質」という意味です。
neo- は「新しい」という意味の接頭語。
cortex [コ]ーテクスは「皮質」という意味の言葉になります。
植物の場合は「樹皮、外皮」という意味です。
例：brain neocortex「大脳新皮質」
下等生物では小さく、高等生物は大きい傾向があるのだそうです。

corresponds with the “what” level. で「～は”何を”のレベルに対応しています」となります。
correspond は「～と対応する、該当する、合致する」などという意味の動詞です。
correspond with ～ で「～と一致している」という意味の言い回しです。
「文通する、連絡を取り合う」という意味もあります。

The neocortex is responsible for ～ で「この大脳新皮質は～を担当しています。」です。
responsible for ～ で「～を担当する、～に対して責任を負う」です。
例：responsible for accounting「会計を担当する」

何を担当しているのかというと、
all of our rational and analytical thought and language. で「私たちの理性的・分析的思考、そして言語の分野をすべて」です。
rational and analytical thought で「理性的で分析的な思考」です。
rational は「理性的な、合理的な」という意味の形容詞です。
例：stay rational「理性を保つ」
analytical は「分析的な」です。
動詞形は analyze アナライズ「分析する」です。
thought は think の過去形でおなじみの形ですが、この場合は名詞で「思考、考え」という意味です。
例：logical thought「論理的思考」

それではまず文節に分けて日本語に訳し内容を理解して下さい。
