I used to have seizures when I was young. My mother and father didn’t know what to do or how to handle it but they did the best they could with what little they had.
で「小さいときに僕はよくてんかんの発作を起こしたんだ。母も父もどうしていいか、どう対応すればいいのかわからなかったけど、わからないなりにもベストを尽くしてくれた。」という意味になります。

I used to have seizures when I was young. で「子供の頃、よくてんかんの発作を起こしていた」です。
used to ～ で「よくしていたものだ」と、昔の習慣を意味する言い回しです。
have a seizure は「発作を起こす」です。
この場合は、てんかんの発作のことです。
seizure は「押さえ込むこと、つかむこと、押収、拿捕」という意味がありますが、この場合は「突然の発作」という意味になります。

My mother and father didn’t know what to do or how to handle it で「母と父はどうすべきか、また、どう対処すべきかを知らなかった」です。
what to do で「何をするか」
don’t know what to do「どうしていいか分からない」という言い回しでよく使われます。
how to handle it で「どのように対処するか」です。

but they did the best they could with what little they had. 「でも彼らは分からないなりにも最善を尽くしてくれた」となります。
do the best they can で「（彼らなりに）できる限りの最善を尽くす」です。
with what little they had で「ほとんど何もない状況で、なけなしの知識で」です。
what little 主語＋動詞 で「なけなしの～」という意味になります。
例：Here’s what little I know.「これがわずかばかり私が知っていることです」

それではまず文節に分けて日本語に訳し内容を理解して下さい。

僕はよくてんかんの発作を起こしていた

when I was young.
子供の頃

My mother and father didn’t know
母さんも父さんも分からなかった

what to do or
どうしていいか

how to handle it
どう対処していいか

but they did the best they could
でも彼らなりにベストを尽くしてくれた
