DNAの分子構造における共同発見者の一人として知られる、アメリカ出身の分子生物学者、ジェームズ・ワトソン博士の言葉です。

で「人間が進化の産物であると受け入れるのなら、真実に先入観を持たずに寛容でなければならない。好むと好まざるとにかかわらず平等ではない差別は存在する。だって、私だったらガムばかり噛んでいるベジタリアンとは結婚しないからね。」という意味になります。

こちらは名言というよりは、問題発言を引用したものです。
ジェームズ・ワトソン氏は、ノーベル賞受賞者である反面、失言も多い人のようです。

If you accept that people are the products of evolution で「もし人が進化の産物だと受け入れるならば」です。
you accept that ～ で「～だということを受け入れる」です。
the products of evolution で「進化の産物」です。
evolution イヴォ[ル]ーションは「進化」です。
動詞形は evolve イ[ヴァ]ルヴ「進化する」です。

then you have to have an open mind to the truth で「それならば、真実に寛容でなくてはならない」です。
then は 前述の if を受けて「それならば」という意味になります。
have an open mind to ～ で「～に寛容である、～に先入観を持たない、～を受け入れる立場だ」という意味です。
open mind は「偏見のない心」という意味になります。
例：tackle problems with an open mind「先入観を持たずにに問題に取り組む」

どんな真実かというと、
Unfair discrimination exists whether we like it or not で「好むと好まざるとにかかわらず平等ではない差別は存在する」です。
unfair discrimination で「不公平な差別、平等ではない差別」です。
whether we like it or not は決まり文句で「好むと好まざるとにかかわらず」という意味になります。

I wouldn’t have married a gum-chewing vegetarian. で「（だって）私だったらガムばかり噛んでいるベジタリアンとは結婚しないからね。」です。
wouldn’t have ～ は仮定法で「（私だったら）～しないだろう」という意味になります。
a gum-chewing vegetarian の部分はちょっとよくわかりませんでした。
なんらかの暗喩表現なのでしょうか？

それではまず文節に分けて日本語に訳し内容を理解して下さい。

人間が進化の産物だと

then you have to
それならば～しなければならない

have an open mind to the truth.
真実を先入観なしにありのままに受け入れ（なければならない）
