バーノン・スミスさんのアメリカのカンザスでの幼少期をつづった文章です。

long hours and a hard life for my parents で「長い時間とつらい生活、私の両親にとっては」です。
(It was ～) が省略された形です。

but for a six to seven year old で「しかし6、7歳の子供の私にとっては」です。
a ～ year old で「～歳の人（子供）」という意味になります。
例：parent of a 3-year-old「三歳児の親」
a 3-year-old (child) と child を省略した形です。

every new day dawned with fresh excitement で「（子供の私にとっては）新しい毎日は、夜が明けた、新鮮な興奮とともに」です。
dawn ドーンは名詞では「夜明け」です。
動詞では「夜が明ける」という意味になります。
例：from dusk till down「日暮れから夜明けまで」

when you have not a care in the world, で「みんな何も悩みがない時」
and so much to learn and witness. で「そして学ぶことや経験することがいっぱいの（時）」です。
