で「西洋社会は、特にアメリカでは、常に『行動する人』を好んできました。『よく考える人』よりも。」という意味になります。

Western societies が主語で「西欧社会」です。
Western は「西洋の」です。
Eastern で「東洋の」となります。

and in particular the U.S., で「そしてとくにアメリカは」です。
in particular は「特に」という意味の副詞句です。
especially とも言い換えられます。

have always favored the man of action over the “man” of contemplation. で「常に～を好んできた、行動する人を、考える人よりも」です。
favor フェイヴァーは「～のほうを好む」という意味の動詞です。
favor ～　over … で「…より～のほうを好む、～をひいきする」となります。
the man of action で「行動の人、行動する人」という意味になります。
a man of ～（名詞）という表現で「～な人」という意味になります。
例：a man of great fortune「莫大な財産を持つ人」、man of character「人格者」
person of ～ とも言えます。
contemplation は「沈思黙考」という意味の名詞です。
動詞形は contemplate [カ]ンテンプレイトゥで「じっくり考える、物事をじっくり検討する」です。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
