People don’t want to go to the dump and have a picnic, they want to go out to a beautiful place and enjoy their day. And so I think our job is to try to take the environment, take what the good Lord has given us, and expand upon it or enhance it, without destroying it.

WSJのインタビューアーの以下のような質問に答えているところです。
How would you rate golf today in terms of its environmental responsibility? What has changed most dramatically since you started designing?

People don’t want to go to the dump and have a picnic, で「人々は～したくはない、ゴミ捨て場に行ってピクニックをし（たくはない）」です。
the dump は「ゴミ捨て場、ゴミの山」です。
dump はダンプカーでおなじみの言葉ですね。動詞では「～をドサッと捨てる」という意味になります。
「恋人を捨てる・振る」という意味でもよく使われます。

they want to go out to a beautiful place で「人々は美しい場所に出かけたいのだ」です。
and enjoy their day. で「そして一日を楽しみ（たいのだ）」です。

And so I think (that) ～ で「それだから、私は～だと思います。」
(that) our job is to try to で「私たちの仕事は～しようとすることだ」です。

take the environment, で「環境を大切に考える」です。
take はここでは「～を重要視する、～を真剣に考える」です。
文脈から take ～ (seriously) と同じような意味に取れます。
例：She did not take me seriously.「彼女は私を相手にしてくれなかった。」
take what the good Lord has given us, は、同じ意味の言い換えで「神が私たちに与えたものを大切に考える」です。
what the good Lord has given us「神が私たちに与えたもの」が the environment の言い換えですね。
and expand upon it or enhance it, で「そしてそれを発展させ、または、より良くする」です。
expand on ～, expand upon ～ で「～を元に進展させる、～をさらに広げる」という意味です。
it は the environment を指しています。
enhance ～ は「～を高める、～をより良くする、増強する」です。
名詞形は enhancement で「強化、向上、高まり」
without destroying it. で「それを破壊することなしに」です。

それではまず文節に分けて日本語に訳し内容を理解して下さい。

みんな～したいとは思いません

ゴミ捨て場に行ってピクニックしたいとは

they want to
みんな～したいのです

go out to a beautiful place and enjoy their day.
