で「かつて私は神様にもう１～２インチ背を高くしてほしいと頼んだ。しかしその代りに、彼は私を自分では測れないくらい、空まで届くほど高くした。人々への影響力という高さを私に与えることで、彼は私に大きな責任をも与えた。」という意味になります。

マララさんはイスラム世界での女性の人権向上を訴えているまだ20歳の女性です。
2012年活動の中で銃撃を受けて一命を取り留めたというニュースはまだ記憶に新しいです。

Once I had asked God for one or two extra inches in height で「かつて私は神様にもう１～２インチ背を高くしてほしいと頼んだ」という意味になります。
once は「かつて」という意味です。
I had asked God for ～ で「私は神様に～を求めた」です。
ask for ～ で「～を求める、～を頼む」という意味になります。
one or two extra inches in height は「身長であと１～２インチ」です。
height ハイトゥは「高さ、身長」という意味の名詞です。
例：height and weight「身長と体重」

but instead, he made me as tall as the sky で「しかしその代り、彼は私を空と同じくらい身長を高くした」です。
実際に空に届くくらいの身丈にしたわけではなく、後でわかりますが、比ゆ的な表現ですね。

so high that I could not measure myself で「あまりに高くて自分では測れないくらい」です。
so ～ that … で「～すぎて…だ、…するほどとても～だ」という意味になります。
measure メジャーは「測る」という意味の動詞です。
重さ・長さ・大きさなどを「測定する」という意味です。

By giving me this height to reach people で「人々に影響を与えるためのこの高さを私に与えることで」です。
this height to reach people で「人々に声を届けるこの高さ」という意味です。
先ほどの比喩の意味が分かりました。
マララさんが一連の事件で世界的に有名人になった事を、「この背の高さ」と表現したわけです。
有名になることで、世界中に自分の考えを届けることができるようになったということですね。

he has also given me great responsibilities で「彼（神）は私に重大な責任も与えた」です。
responsibility は「責任、義務、恩義」です。

それではまず文節に分けて日本語に訳し内容を理解して下さい。

しかし代わりに
