アップルを追い出された後、ジョブズは再チャレンジします。

で「その後の5年の間に、私はNeXTという名前の会社と、もう一つPixarという名前の会社を立ち上げました。そして後に妻となる素晴らしい女性と恋に落ちました。」という意味になります。

During the next five years で「その後の5年の間に」という意味です。
next は「次の」ですが、「その後の」という意味でも使われます。
例：over the next 2 years「その後2年以上にわたって」

I started a company named NeXT, another company named Pixar で「私はNeXTという名前の会社と、もう一つPixarという名前の会社を立ち上げました。」という意味になります。
start a company で「会社を設立する、会社を興す」という意味になります。

fell in love with an amazing woman who would become my wife「後に妻となる素晴らしい女性と恋に落ちた」です。
fell は fall「落ちる」の過去形です。
fall in love で「恋に落ちる」、fall in love with ～ で「～と恋に落ちる、～に心を奪われる」です。
an amazing woman who would become my wife で「（その後）妻となる素晴らしい女性」です。
amazing は「驚くほどの」という意味もありますが、「実に素晴らしい」という意味でも使われます。
例：have an amazing career「実に素晴らしい経歴を持つ」

それではまず文節に分けて日本語に訳し内容を理解して下さい。

その後の5年の間に

I started a company named NeXT,
私はNeXTという会社を立ち上げ、

another company named Pixar,
もう一つPixarという会社を（立ち上げた）

and fell in love with
そして～と恋に落ちた
