From fashion to extracurricular activities で「ファッションから課外活動まで」という意味になります。
from ～ to …「～から…まで」という形はよく使われる表現ですね。
extracarricular は「課外活動」という意味です。
curricular は「学校のカリキュラム、教育課程」のことで、それに extra-（外の）がついている形です。

the lives of an American colleges students が主語（主部）で「アメリカの大学生の生活」となります。
lives は life の複数形です。ライヴズと発音します。
動詞 live の三人称単数形 lives はリヴズと発音しますので違いが分かるようにしておきましょう。

an ocean apart from ～ は「大きく異なっている、そうとうかけ離れている」という意味になります。
apart from ～ で「～から離れている」という意味です。
それに ocean オーシャン「海」がついて強調した形ですね。
大海ほども離れているというイメージです。

their counterparts in Japan で「日本でのそれ」という意味です。
counterpart は「同等にくるもの、かわりとなる物、一方にくるもの」という意味の名詞です。
前述したものの対照となる物を意味します。
この場合は、the lives of colleges students のことです。
例：exact counterpart to ～「～にぴたりとくる言葉」
