で「愛媛県で神隠しに会おう。お遍路と太古からの温泉。愛媛は目的地であると同時に、その見どころの多くが旅路である。」という意味になります。

spirited away は「神隠し」という意味です。
spirit は「精神、幽霊、妖精」などと言う意味なので、妖精に遠くに（away）連れて行かれるという意味合いです。
また、愛媛の旅館（道後温泉）が映画「千と千尋の神隠し（英語タイトル：Spirited away）」の舞台のモデルになったことにも繋がっていますね。

Pilgrim paths は「巡礼の道」です。
四国で巡礼道と言えば、お遍路ですね。
ancient baths で「太古の風呂」です。温泉地のことです。
Pilgrim paths and ancient baths と、paths と baths に韻（rhyming）を踏んでいます。

Ehime is as much about the journey as it is the destination は「愛媛は目的地であると同時に、その見どころの多くが旅路である。」と訳しました。
ちょっと意味がとりづらい文ですが、注意深く見ていきましょう。
as ～ as … は「…と同じくらい～である」という意味です。
journey は「旅、旅程、旅路」という意味です。
destination「目的地」に対して、journey「旅の途中」という意味合いです。
英語の有名な言葉で、
It’s All about the Journey, Not the Destination.「（人生は）そのすべてが旅である。目的地ではない。」というのがあります。
as it is the destination 「それが目的地であると同時に」
much about the journey で「旅の途中が多い」ですので、
目的地でもあるけども、旅の途中に楽しみが多い（寄り道すべき見どころが多い）ですよ。という意味合いになります。
この場合の about は「おおよそ、大体」という意味の副詞です。
例：about right「大体正しい」、just-about-perfect「ほとんど完璧」

それではまず文節に分けて日本語に訳し内容を理解して下さい。
