で「私は膵臓とは何かということさえも知らなかった。医者は私に言った。これはほぼ確実に治療不能な種類のガンだと。そして３～６か月以上長くは生きられないと考えるべきだと。」という意味になります。

not even know ～ で「～すら知らない」という意味の言い回しです。
what a pancreas was で「膵臓が何か、膵臓がどんなものなのか」です。

The doctors told me ～ で「ドクターは私に～だと言った」です。

何を言ったかというと、
this was almost certainly a type of cancer that is incurable で「これはほぼ確実に治らない種類の癌だ」です。
almost certainly は「ほぼ確実に、ほぼ間違いなく」という意味の言い回しです。
almost は「だいたい、ほとんど」、certainly は「確実に、必ず」です。
incureable は「治療できない、不治の」という意味の形容詞です。
in-（否定）+ cure（治療する、治す、癒す）+ able（出来る）という成り立ちの言葉です。

and that ～ で「そして～ということ（を言った）」です。

I should expect to live no longer than three to six months で「私が3-6カ月以上生きられないだろうと思うべきだ」です。
expect は「予期する、期待する、～だろうと考える」です。
three to six months で「3～6か月」という意味になります。

それではまず文節に分けて日本語に訳し内容を理解して下さい。
