Which is great, because the Romans did not actually think that a genius was a particularly clever individual. They believed that a genius was this, sort of magical divine entity, who was believed to literally live in the walls of an artist’s studio, kind of like Dobby the house elf, and who would come out and sort of invisibly assist the artist with their work and would shape the outcome of that work.

Which is great, で「それは素晴らし事です」です。
which は直前の文を受けての関係代名詞です。

because ～ 「なぜなら～」

the Romans did not actually think (that) で「ローマ人は実際には～だと考えていなかった（から）」です。
どう考えていなかったかというと、
(that) a genius was a particularly clever individual. で「ジーニアスは特別に頭のいい個人である（と）」です。
現在では a genius といえば「天才、鬼才」という意味で特定の個人を指しますが、当時のローマではそう考えられていなかった事です。

They believed that ～「彼らは～だと信じていた」

a genius was this, sort of magical divine entity, で「ジーニアスは、ある種の摩訶不思議な神的存在」です。
この this も前回同様「ほらあの～、なんと言うかこんな風な」という意味合いで、
今、話者が「思い浮かべているもの」を指していいます。
打ち解けた会話で何かを新たに提示。テレパシーでも使えるかのように、思い浮かべているものを指す。記憶・心象を包み隠さない親密感と、多少のなれなれしさを伴う。文法的にはa, anで置換可能。
このスピーカー（エリザベス・ギルバートさん）は、this や sort of, kind of などぼかし表現を多用するのが特徴ですね。
magical divine entity で「不思議な神的な存在」です。
entity は「実体、実在」という意味の名詞です。abstract「抽象」の反対です。

who was believed to ～ で「（それは）～すると信じられた」です。
literally live in the walls of an artist’s studio, で「文字通り、壁の中に住んでいると、芸術家の工房の壁に」です。
kind of like Dobby the house elf, で「～みたいな感じで、ハウスエルフのドビーのような」です。
Dobby the house elf はハリーポッターに登場するキャラクターです。
house elf とは、魔法使いに仕える妖精のことです。

名前 + the + 種類 という方で、「～の…」という決まった言い回しです。
例：Felix the Cat「猫のフレックス」

and who would come out and sort of invisibly assist the artist with their work で「そして（それは）壁から出てきて、こっそりと芸術家をアシストする、作品作りで」です。
who はまだ magical divine entity にかかっています。
invisibly assist ～ で「人目に付かないように～を手助けする」です。
help ～ with … で「～が…するのを手伝う」と同じ型です。
assist the artist with their work で「その芸術家が作品を作るのを手助けする」です。

and would shape the outcome of that work. で「そしてその作品の出来を左右する」です。
shape the outcome of ～ で「～の成果を形づくる、～の出来に大きく影響する」という意味の言い回しです。
outcome は「～の出来、～の成果、結果、出てきたもの」です。
