And I’m also one of these people that I don’t really care about being right, you know, I just care about success. So, you’ll find a lot of people that will tell you that I had a very strong opinion and they presented evidence to the contrary, and five minutes later, I completely changed my mind.

で「そして、また私は正しいかどうかは全く意に介さないタイプの人間です。ただ成功することだけが大事だと考えています。だから、多くの人が知っていると思いますが、私がはっきりした意見を持っていて、誰かが正反対の証拠を提示したとします。すると私は5分後には完全に考えを変えています。」という意味になります。

And I’m also one of these people that ～ で「そして私はまた～な人々のうちの一人です」です。
one of these people で「このような人々の中の一人」ですが、
この these は some kind of ～ と同じような意味合いです。
this の用法で以下がありますが、それの複数形バージョンですね。
this「〈話〉こんな、とある」◆打ち解けた会話で何かを新たに提示。テレパシーでも使えるかのように、思い浮かべているものを指す。記憶・心象を包み隠さない親密感と、多少のなれなれしさを伴う。文法的にはa, anで置換可能。
that ～ で関係代名詞節かと思いきや、
I don’t really care about being right.「私は正しいことにはあまり重要視しない」と完全な文が来ています。
即興の会話文なので文法的にはおかしいですが「そう言うような人間だ」ということは伝わりますね。
care about ～ で「～を気にする、～を大切にする」という意味になります。
being right で「正しくあること」という意味の名詞句です。

I just care about success. で「私はただ成功を気にする」です。
success で「成功、うまくいくこと」です。

So,「ですから」
you’ll find a lot of people that will tell you that ～ が前置きで、直訳すると「あなたは見つけるでしょう、多くの人を、あなたに～だと言う（人を）」
つまり「以下のようなことを証言する人たちがたくさんいると思いますが」「みんな私のことをこんな風に言っていると思いますが」ということです。

どんなことを証言する人が多いかというと、
I had a very strong opinion「私がとても断固とした意見を持っている」
and they presented evidence to the contrary,「そして彼らが（私に）正反対の証拠を提示する」
and「すると」
five minutes later, I completely changed my mind. で「５分後には、私は完全に意見を変えている」
ということを、彼らは証言するということです。
つまり、a lot of people や they は、ジョブズの部下や仕事仲間たちを指していることになります。

それではまず文節に分けて日本語に訳し内容を理解して下さい。

And I’m also one of these people that
そして私はまた～なタイプの人間の一人です

I don’t really care about being right,
正しいことにはあまりこだわらない（というような）

you know,
そうです

I just care about success.
私はただ結果うまくいくかどうかが大切だと考えます

So, you’ll find a lot of people that will tell you that
だから、～とあなたに証言するたくさんの人が見つかるでしょう

I had a very strong opinion and
私が断固とした意見を持っている

they presented evidence to the contrary,
そして彼らが正反対の証拠を提示する

and five minutes later,
すると五分後には

I completely changed my mind.
私は完全に意見を変えている（と証言する）
